O.K. Curt's Beer Can Chicken really sounds great, but I had already made a decision for tonight so I'm going to stick to it. Although, I now think I know what's on the menu for tomorrow.

This is a simple "healthy" dish I kind of made up one night, and I've enjoyed it dozens of times since. Here goes:

Plain chicken breast grilled
Green, yellow, red peppers, baby portabella mushrooms and purple onion sauteed in olive oil with garlic
Boursin cheese
Mixed greens

Basically I cube the chicken when finished, slice the peppers long then halve, and blossom the onion. I then serve the above ingredients over the mixed greens and crumble the Boursin cheese over top. The flavors really explode, which is why I do not season the chicken. The colors really look great and the taste is incredible.

We had the "carb loaded/Ragnar's healing his shin splints so he is trying to put some weight and muscle mass back on dinner. "

Perfectly cooked Italian sausage, sauted green pepper, onions, and mushrooms. Add a huge serving of Rotini and Ragu. Fried the sauage and boiled them in beer. Follow up with a beer. Dang I realized I forgot to try out our new garlic press.

Wish I'd had more time to cook a better dinner, been cleaning up my remodeling mess and doing a photo shoot with the lovely wife and her horse, gun, CAO cigar and riding crop...lost track of time.

I come home, I'm hungry, I check my e-mail... now my stomach is eating itself. That sounds THA BOMB and easy-ish to make. I'm not much of a cook but I think I'll try my hand at some of that for my late night snack tonight. Kroger here I come. Good lookin' out with the recipe Micah. Have you ever had Hot Pockets?

Okay, it's spring time in Nebraska - which means the normal high temps are mid- to upper 70s, occasionally topping around 80. BUT, this is Nebraska - ain't nuttin' normal about the temps here, so we have already had highs over 90 degrees a couple of times.

But we're in a cooler, wet (rain showers) spell, so while today was dry, the temps are currently in the lower 60s with a hearty breeze, probably dropping to close to 50 or lower.

So, my wife Jeanne made up a pot of white bean chili with chicken, topped with cheddar cheese, sour cream and toasted corn tortillas for crumbling into the soup. Not a drop left!!!!! Mmmmmmmmmmm
